JOB DESCRIPTION
The Executive Pastry Chef manages the daily pastry operations. Exhibits baking and decorating talents by personally performing tasks while leading the staff in preparing quality and consistent pastries for all areas.
What will you be doing?
- Ensures pastry preparation shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
- Ensures compliance with all local, state and federal (OSHA, ASI and Health Department) regulations.
- Establish the day’s priorities and assigned production and preparation tasks to be executed.
- Review daily pastry specials.
- Review banquet event orders and make note of any changes.
- Communicate both verbally and in writing to provide clear directions to team members.
- Take physical inventory of specified pastry items for daily inventory.
- Ensure all supplies are received, stored, and secured correctly.
- Meet with the Front of House Leadership to review equipment needs, banquet dessert plate-up assistance, cleaning schedule/project status, health/safety and sanitation follow-up.
- Ensure that each kitchen work area is stocked with specified tools, supplies, and equipment to meet business demand.
- Ensure that items are prepared following recipes and yield guides, according to department standards.
- Ensure that quality and details are being maintained.
- Assist the Culinary Leadership with the development of new pastry items, test, and write recipes.
- Assist and direct training of new hires in specific phases of the pastry operation as directed.
- Ensure compliance with health and safety guidelines, including the handling of special dietary and allergy requirements as needed.
- Comply with attendance rules and be available to work on a regular basis.
- Be present during meal periods.
- Perform any other job-related duties as assigned.
Required Skills & Abilities
- Knowledgeable on the fundamentals of pastry techniques and plate presentations.
- 2 years of related experience and/or education is required.
- Must be able to work flexible shifts that include evening, weekends, and holidays.
- Tips Trained and Food Handlers certification are all highly preferred.
- The ideal candidate will be organized and able to work with a sense of urgency and seek guest satisfaction.
- Ability to grasp, lift and/or carry, or otherwise, transport up to 50 lbs.
